Home made pizza
A couple years ago we started doing family movie nights on Fridays. We make homemade pizza and watch a movie. The kids love it and its one less day I am wondering what to cook for supper. When I make my plans for the week on Sunday mornings the first thing I write down is taco Tuesday and pizza Fridays. Jared cooks something on the grill Saturday and Sunday. Leaving me with only 3 meals to think about.
HOMEMADE PIZZA DOUGH
1c. Warm milk
½ c warm water
2 ¼ tsp yeast
2 TBSP honey (can use sugar)
2 eggs room temp
4 TBSP olive oil (I use lard)
5-51/2 c flour
1 tsp salt
Put the first four ingredients in a bowl and let sit for 5 minutes. Then add eggs, oil and salt and a cup of flour, using the dough hook to start mixing. Then slowly start adding in the flour until it starts pulling clean off the sides.
Cover and let rise for an hour, punch down and rise again for another hour.
Heat oven to 500 degrees. Roll out to just bigger than your pan, then working in a circle fold over about an inch of dough to make a thicker edge around the pizza.
Top with sauce and your favorite toppings ending with cheese.
Bake for about 20 minutes. I like the cheese to be a little crispy when its done.

Tips to make on the Blackstone: Roll dough out very thin where its similar to a tortilla. Place on hot grill then add your toppings. This will take around 5-8 minutes each to cook. We used several small pizzas so it was easier to handle. Cheese won't get crispy but it will be melted.
Ideally you would need to start your dough at 3pm in order for it to rise twice and be completely ready by 6pm. We both know that can be impossible. Most of the time I just start it at 4:30 or 5 and just let it rise while the oven is heating up. Everyone likes a thinner crust at our house so very little rise time works great for us.
Switch up toppings and sauces. Make personal pan sizes and let the kids put on the toppings. My kids like putting the pepperonis in the shape of a smiley face. Make it fun!
