I know that buying a whole or half hog is intimidating. You call the butcher and you have to make decisions of what you're going to eat for the next year all in a five minute phone call.

Our family eats a lot! It's normal for us to cook 8-10 pork chops for supper.

Why is that important? Because it limits waste and allows you to only cook what you need.
Sometimes I will browse the meat counters just to be curious. I notice that everything is packaged for families. Yet only ⅓ of the population needs that much in a meal. Yes, you can freeze the extras but if you don’t have a good quality vacuum sealer it's going to go bad before you even get to it.
