How to Order custom pork Cuts

When I first started calling the locker for our personal pork and beef cuts, I was a bit intimidated. Worried that if I made the wrong choice that we would be stuck eating on something we didn’t like for months.

If this is you, I am here to easy your worries and help you get started.

The cut sheet here is from T and S Butcher Shop in Paris, MO. This is a basic cut sheet that is easy to understand and the only difference between this Locker and another would be the different flavors of bacon and brats.

You are welcome to print this off and fill it out when you call the locker to order, then you know exactly what you what and its all written out for you.

An important thing to remember is that your going to get back some sort of ground meat, this is just from trimming other cuts and little pieces here and there. You can keep this as ground pork or you can have it seasoned into sausage or even brats.

If there is a cut that you are not familiar with or you know you don’t like just have it ground into sausage or ground pork too.

I recommend that if you are not familiar with a cut and you don’t like trying new recipes to only stick with what you know to start with.

You may not order it the same each time, we like to switch it up based on the time we are getting our pork back, whether grilling cuts for summer or more crock pot meats for winter.

Remember each cut is based on where it is on the pork, steaks are on the shoulder, ham is on the butt, bacon is on the belly ect.

When ordering a half or whole hog you get to choose everything from the cuts, thickness of cuts, and how many in a package. This creates a freezer full of meals just for your household, that in turn limits any waste.

A pork loin (misspelled below) is along the back bone and can be turned into tenderloin, bone in or boneless pork chops or a loin roast.

Don’t be afraid to ask the locker any questions you have while ordering. They too want you to be happy with all the cuts you bring home. It can be helpful to write these down before hand too so you don’t forget while on the phone.

If you have never ordered before, I always suggest you start with a half hog. Then you get a little of everything and you can adjust it on your next one if needed.

Lets put some high quality pork in your freezer and start cooking like grandma, except maybe with a new gadget like a Blackstone grill or air fryer, no need to be in the kitchen all day.
