MAPLE BACON JAM

This is a great way to use your bacon ends you get from your whole or half hog.

When cutting bacon there’s just a small end that won’t safely cut in the slicer. So you get this nice thick chunk of bacon that you may not know what to do with it.

Anything that you would cut up bacon to be in this is great for that and you don’t have to use up your nice slices.

Examples are:

bacon bits, you can freeze any you don’t use for a quick added flavor next time you need it.

Toppings for a home made pizza

Add small pieces into your burger patties as your forming them

ham and beans- cook the bacon pieces some to add in more flavor

MAPLE BACON JAM

1 ½ pounds bacon cut into 1” pieces 

1 large onion diced small

½ c apple cider vinegar

3 cloves of garlic peeled and smashed

½ c brown sugar

¼ c maple syrup

¾ c brewed coffee

1 tsp red pepper flakes

Cook the cut bacon in a skillet, drain the fat and add in the onions and garlic, cook until soft. 

Add in the remaining ingredients and cook down until it looks thick. Then take your hand blender and break down the ingredients until it’s chunky but will easily fit on a cracker. ( very technical terms) 

That's it!! Even better is you can store it in a jar in the fridge for up to 4 weeks.

Try it on a burger, pizza, sandwich, pour over cream cheese or just put it on your charcuterie board and surround with meats, cheese, crackers and veggies.
