Pork Shoulder Roast
I can’t believe this was my first time making a pork shoulder roast. It was delicious! We have been missing out for years. Normally we try to get as many pork steaks as possible out of the shoulder, but this time I listened to Dennis at Center Locker when he said those are the best roasts.
Even better, we were able to get 18 servings out of 6 pounds of roast! Between supper twice first as a taco night then as a stuffed spud, then for Jared and the kids lunch it was a success.
Wait, maybe the better part was the fact that I just put it in the crockpot, added spices then it was ready when we were.
Either way, surely you know how great it is to stretch a meal and not have to slave over the stove.
First night was taco night, I tripled the recipe since I knew I wanted leftovers. But the original recipe is:
Carnitas Tacos
2.5-3# pork shoulder roast
1 Tbsp cumin
1.5 tsp kosher salt
1 tsp dried oregano
¼ tsp cayenne pepper
½ white onion, chopped
1 orange, quartered (I didn’t have one)
2 Tbsp lard
Corn tortillas
Cut the roast into 3 pieces, place in a crockpot then top with the seasonings. Toss the roast pieces around to coat all sides. Add onion, squeeze orange juice then place in the crockpot too.
Can be cooked on low (8-10hrs) or high (4-5hrs) depending on your timeline.
Meat will easily come off any bones and shred.
Heat lard in a skillet and crisp the edges of the shredded meat for just a couple minutes to add more flavor.
Serve on corn tortillas.
Alright, now I will share that I did not heat it again on the skillet, and we ate it just like we would ground beef on a normal taco night.
But this would be amazing made into some homemade taquitos.
Second night we just added any leftovers into a skillet, covered in BBQ sauce and served over baked potatoes. It was a big hit with the family and it didn’t feel like we had just eaten it because of the different flavor.
The second night we were deciding between stuffed spuds or pulled pork nachos, which would also be delicious if you needed to squeeze another meal out of it.
Don’t forget that if a 2.5 pound roast is too much for you to eat at one time that you just put the extras in a freezer bag and store for later.
